WHere is a simplified interpretation of a cocktail from the seasonal menu. It's a batch pre-mixed which is bursting with the flavours of a holiday season, which makes it ideal for hosting a festive gathering. Reserve the remaining citrus syrup you can use for breakfast cocktails, puddings, or to mix another batch of bikinis.
Bikini Recipe
Yields 10 people
For the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Combine all the ingredients into a pan, heat until it reaches a simmer, mixing so the sugar melts. After that, remove from the stove and leave to cool completely. Transfer into a sterilised bottle, seal keeping it in the refrigerator, where it will keep for about four weeks.
To make Premix: Mix the specified liquid ingredients into one big jug, let it rest for an hour, then filter it , ideally through a fine cloth, to ensure it's perfectly clear.
For serving: Measure 85ml from the batch mix into your stirring glass filled with ice, and agitate carefully for one minute to chill. Pour to a cold coupe glass or equivalent, decorate with the cranberries and finish by giving it a quick spritz of the essential oil over the drink.
